Tomato Sauce

A recipe for tomato sauce that you can use in many ways.

Of course it is a basic for many pasta dishes. But it is also good for pizza, eggplant parmesan and other recipes requiring a tomato sauce.

There is a lot of sauce here. It keeps well in the refrigerator and freezes well. And, of course, it is easily scaled to a smaller sized batch if you don't want extra.

The easy way to make this tomato sauce is to use canned tomatoes. The old way is to use fresh fruits.

Slice two large cloves of garlic and saute them in 1/4 cup of oil oil.

When the garlic starts to turn golden, add 1.5 kilo of crushed tomatoes, .8 kilo of diced tomatoes, 1 teaspoon salt, 2 tablespoons sugar, 2 tablespoons of chopped fresh basil, 1/2 teaspoon of fresh ground pepper.

Simmer for 1/2 hour or so. Check and adjust your seasonings to your taste.

Just before serving, add 1/2 cup fresh basil.

 

 

If you are going to use just part of the sauce, adjust the amount of fresh basil you add to that you will use. When at some future time you use the remainder, add fresh basil.
