How To Make Italian Sausage

It is really quite easy to make small amounts of sausage at a time. You do not need big, expensive equipment. Just a small meat grinder is sufficient.

If you wish to put the sausage in casings, you can use a stuffing attachment for your grinder. Or you can do it the old way by hand cutting and using funnel.

In fact, in the old days, they used a cow horn as a funnel. You can see the old way of doing it at Sausage The Old Way

Most important is that your grinder has a sharp cutting blade and that you get a good clean cut on the meat. If the blade is dull, it crushes the meat instead of grinding it and the end product is terrible.

Here is the Italian Sausage Recipe

Italian Sausage Recipe. 2 1/2 pounds lean ground pork butt or leaner cuts if desired 3 large cloves garlic, crushed 1/8 teaspoon dry basil 1/8 teaspoon dry oregano 1/8 teaspoon cracked rosemary 1/8 teaspoon hot red pepper flakes (or to taste) 1 1/4 teaspoons fennel seed (up to 1 tablespoon if you like dominant fennel flavor) 1/4 cup dry white wine 1/2 teaspoon salt 1 1/2 teaspoons freshly ground black pepper 2 tablespoons Fresh Italian (flat leaf) parsley, chopped, (stems removed)

Adjust the ingredients to your taste.



Just take your time. There is no great rush.

Keep the meat cold between grinding sessions.
