Cream of Broccoli Soup

This is a very easy Broccoli soup to make.

You can make this place ahead of time and use it either the next day or put it in the freezer for later use.

Of course, there's no reason you can't take it from the stove to the table.

Beyond that, you can use the soup base as it is and add soup broth instead of cream.

This will make a rather thin soup to which you can add sour cream.

The main feature of the soap is particularly nice.

The basice recipe for cream of broccoli soup is simple.

Boil a head of broccoli in broth made with water and boulion cubes or your favorite soup stock.

Remove a couple flowerettes when they still have a little bite to them. Put them aside to cool enough so that you can handle them to cut them into small pieces to later be added to the creamed broccoli.

Boil the remainder of the broccoli until is is very soft. Remove it from the broth and put in a blender.

Add some broth so that the broccoli will thoroughly blend. Do not add too much. You can add more later if you must.

Remove the puree from the blender, and add some light cream. Add more broth if you wish.

Then add the broccoli pieces.

Garnish and serve.

If you wish to freeze it, just freeze the puree. Thaw it later and make it as you wish.
